An ancient Italian tomato variety ‘Cuore di bue’ (loosely meaning ‘ox heart’) is perfect for what’s perhaps the most famous salad in the world: Insalata Caprese. With all the colours of the Italian flag - red tomato, green basil and white mozzarella - this is a true salad of patriots. The encircling Tyrrhenian Sea provides flying squid and red bream. When the flying squid is served with local potatoes, you get ‘Totani e Patate’, which combines water and earth, the two souls of Capri.
Lucia Scialapopolo is from a fifth-generation Caprese family. When her grandchildren come to stay, ‘Nonna’ loves to serve their favourite local dishes: ‘ravioli Capresi’, ‘frittata di spaghetti’ and ‘torta Caprese’, a flourless as well as gluten-free chocolate cake. In haste, the original cook forgot the flour - or so the legend goes.

    La cuisine de l’Élysée se doit d'être l'ambassadrice de la gastronomie de la France, c'est normal et je veux bien payer pour ça. Ce que je ne trouve pas normal, c'est la cantine du sénat: Les sénateurs se gavent comme dans un étoilé à mes frais, c'est pas normal. Ils sont tous gros d'ailleurs les sénateurs qui sont là à se gaver pendant au moins neuf ans.

    Je reviens pour dire que pour le plat principal, là non plus, aucune démonstration d'une quelconque satisfaction ou insatisfaction, aucune remarque, aucun compliment. Je ne pige pas. La journaliste est si vulgaire et cela accentue cette impolitesse généralisée.... Seul Monsieur Vaussion, ex Chef à l'Elysée, a daigné faire un compliment sur le soufflé glacé. OUF on a eu chaud. Le Chef ROTH est remarquable, à tant d'égards. ça me fait de la peine pour son travail, pour lui....

    Lors de la dégustation de l'entrée de Mr Roth, personne ne dit ce qu'il en pense... Aucune remarque, bonne ou moins bonne, aucun compliment, rien ayant trait au plat ! Je trouve cela très mal élevé, très déplacé. Cela frôle la goujaterie... Cela me fend le coeur pour le Chef. C'est d'une impolitesse sans nom, indigne... d'une belle table ? Oups. Merci Chef, pour votre simplicité, votre humilité, et votre talent. RESPECT.
